De fruita, de pinyons, farcides amb crema, massapà, de llardons … la Coca de Sant Joan s’ha convertit en un clàssic imprescindible a Catalunya en aquestes dates.
Aquest any el certamen vol que sigui un reconeixement a la tasca constant que el sector de la forneria i la pastisseria ha realitzat en el darrer any, malgrat la pandemia, lluitant per mantenir vives les tradicions gastronòmiques del país.
El concurs, organitzat per l’agència de màrqueting gastronòmic Sr y Sra Cake, compta amb l’esponsorització principal de Fills de Moretó, productor de farines Premium per a professionals i consumidor final, i també el patrocini de Borges Professional -empresa líder d’olis, fruits secs i mantega vegetal (Agreena) i Barry Callebaut, empresa líder fabricant de xocolata per a professionals de la pastisseria i forneria. Un any més el concurs compta amb el suport del Gremi de Flequers de Barcelona, el Gremi de Flequers de la Província de Barcelona, el Gremi de Flequers Artesans de les Comarques Gironines, el gremi de forners de Lleida i Associació de Forners i Pastissers de Balears.
La convocatòria s’obre a pastissers i forners sempre que tinguin un punt de venda. La pastisseria o fleca candidata es podrà presentar a qualsevol de les 4 categories del concurs: Tradicional (de fruites confitades i pinyons); de Crema i pinyons, Creativa i de llardons.
Cada pastisseria o fleca es podrà presentar a tantes categories com vulgui.
Com a novetat s’obre un accèsit especial per les coques presentades pels estudiants de les escoles profesionales, destinat a premiar el talent dels futurs forners i pastissers del país.
Les inscripcions estan obertes i s’efectuaran fins al dilluns 17 de maig omplint el formulari dinscripció. Consulta les bases i
Les coques s’hauran de lliurar a l’Antiga Fábrica Damm de Barcelona (c / Roselló 515) el mateix dijous 20 de maig entre les 9h i les 12h del matí.
La valoració de les coques presentades a concurs tindrà lloc entre les 13h i les 15h i el veredicte es comunicarà el mateix dia.
Aquest any, de nou a causa de la situació restrictiva de concentració de persones, no podrà celebrar-se un acte festiu de lliurament de premis com estava previst.
El jurat estarà compost pels guanyadors de l’edició anterior, professionals de sector i representants de mitjans de comunicació especialitzats en el sector del bakering.
Com a premi, es lliurarà un guardó a la Millor Coca de Sant Joan 2021 per a cada categoria (Tradicional, Crema, Creativa i llardons i la Coca Novell) i un lot de productes dels patrocinadors. Els guanyadors no podran participar com a concursants en l’edició següent i passaran a formar part del Jurat de la propera edició del concurs.
